Pan Fried Duck Breast
This dinner is a staple in our house! The goal here is to render the fat from the duck while cooking. You get a tender piece of meat with crispy skin. We then use the rendered fat to cook our veggies.
INGREDIENTS:
2-4 Duck Breasts(skin on)
Salt to Taste
Veggie of your choice(our two favorites are broccoli and green beans)
INSTRUCTIONS:
1. Take your duck out 30-45 minutes before cooking. Pat dry. Sprinkle with salt and let sit.
2. Heat pan to medium heat with SMALL amount of oil or butter. Cast iron or stainless work best.
3. Place breast skin side down. Cook for about 5-6 minutes. This is the step where you are rendering the fat from the duck and also crisping the skin.
4. Flip to meat side for approx 2 minutes. To be served medium rare.
5. Pull off the duck and immediately add veggies to the pan.
6. Cook veggies to desired doneness
